Stags Leap District Cabernet Sauvignon 2021

Influenced by the San Pablo Bay, leads to slow, even fruit development throughout the growing season. The berries were hand harvested at night, carefully sorted, and destemmed to tank, where fermentation took place. The wine was then racked to 25% new French and 15% new American oak barrels and aged for 20 months prior to bottling. Aromas of floral sweet pea, sun-ripened plums, sweet oak, mushroom, and wet earth leap from the glass. The bold, rich, mouth-filling flavours of blackberry, black liquorice, espresso, tobacco and cocoa combine with juicy acidity.
